Cooking -Beer and Brats

Oh, the joys of a vacation! That's where I have been, and believe me, we did lots of grilling. Today as promised I have the recipe for Beer and Bratwurst. Also enjoy the wonderful seasoning recipes. I believe I will move on to something different next article. Hope you all are having a wonderful summer.

Basic Meat Seasoning Rub

1/4 cup onion powder

1/4 cup dried thyme leaves

4 teaspoons garlic salt

1 teaspoon pepper

In a medium bowl, combine all ingredients and mix well. Brush meat with oil. Sprinkle or rub seasoning onto all surfaces of meat or fish.

Makes 3/4 cup

 

Chipotle Chile Butter

5 tablespoons butter, softened

1 small chipotle chile in adobo sauce (7oz can,chopped)

1/4 teaspoon adobo sauce

 

In a small bowl, combine butter, chile and adobo sauce; blend well. Serve over grilled meat or poultry.

 

Lemon Herb Marinade

1/3 cup vegetable oil

1/2 teaspoon grated lemon peel

2 tablespoons lemon juice

1 tablespoon dry white wine or beef broth

1/4 teaspoon dried sage leaves

1/4 teaspoon dries oregano leaves

1/2 teaspoon salt

1/4 teaspoon ground pepper

 

Mix all ingredients in a shallow nonmetal dish. Add up to 2 pounds of meat, turning to coat. Cover dish and refrigerate, turning meat occasionally, for at least 4 hours. Remove meat and grill as desired.

Beer and Bratwurst

Prep: 25 min. Grill: 10 min.

Makes 5 servings

 

5 bratwurst*

1 12 oz can of beer

1 medium onion, sliced

10 whole peppercorns

5 buns of your choice

 

In a large saucepan, combine all ingredients, except buns.

Bring to a boil over medium heat

Reduce heat, cover and simmer 10 minutes

Remove brats and continue simmering onions until desired tenderness

Grill brats 4-6 inches over medium heat for 6-10 minutes or until browned

Drain onions and serve on buns with onions on top.

 

*Italian Or Polish Sausage can also be used
